Tökös kókuszrizs


First:
In your food processor, using the “S” blade “pulse” chop yellow squash to a rice like consistency. Set aside.

Now make the Mexican coconut rice mix.
In a mixing bowl, mix:
3 x sun dried tomato chopped
3 tbsp coco butter
3 tbsp bell pepper chopped
3 tbsp onion chopped
2 tbsp cilantro
½ tsp black pepper
½ tsp chili
¼ tsp cumin
1/8 tsp cinnamon
Yield = ¼ cup
raw mixican coconut rice
To Serve:
Combine 1 oz mexican coconut rice mix to 2 oz yellow squash rice and mix well. Serve as a side to your favorite raw Mexican or Caribbean dish. YUM!!!
